The Resorts and Gaming Department consists of six main programs:
The Associate of Applied Science and the Certificate of Achievement Degree in Casino Management are designed to help students seek employment in entry- level or supervisory positions. For those currently employed, these programs will aid job advancement, professional growth and career mobility within the gaming industry. Students may continue studies at a four-year institution to pursue a bachelor's degree.
The Associate of Applied Science Degree and Ceritficate of Achievement with an emphasis in Hotel Management are designed for those seeking employment in entry level supervisory positions or for those currently employed in the hotel industry, an opportunity for job advancement, professional growth and career mobility. Students may continue studies at a four year institution to pursue a baccalaureate degree.
The Food and Beverage Management Program at CSN is one of the fastest growing programs of its type I the nation. With the addition of the 50,000 square foot Resort and Gaming Facility in 1995, which includes five kitchens, a 120 seat restaurant, a bar, multiple classrooms and a casino training lab, the program has taken a leading role in Hospitality education in the southwest.
Russell’s Restaurant is the training center for the Culinary Arts and Food & Beverage management programs. At Russell’s, Culinary students prepare the food and Food & Beverage Management students manage and operate the restaurant. This is all done under the direction of qualified faculty.
CSN provide a quality, professionally oriented program for anyone wishing to enter and/or advance in the field of culinary arts. Some of the most exciting employment opportunities within the culinary arts profession are in Las Vegas. The "Entertainment Capital of the World" caters to millions of tourists annually.Students are taught to master the fundamentals of cooking with emphasis on hands-on preparation of various cuisines. From Basic Cookery to American Regional, International and French cooking, the public can sample students' masterpieces in Russell's Restaurant on campus.

Students in the CSN Culinary Arts programs may earn a Certificate of Achievement or an Associate of Applied Science Degree with an emphasis in Pastry Arts.
Students are taught to master the fundamentals of baking and pastry arts with emphasis on hands-on preparation of various techniques. From baking and pastry, to chocolate and sugar art, the public can sample the students' masterpieces in Russell's restaurant.
